Salad Juicing Liquid SunshineMmmm, so what did I eat?

Well, other than my juices and smoothies which now had the interest of everyone else in the house, I was making heaps more than usual hence having to buy a bit more produce.

Getting back to what I actually ate…just much smaller portions than everyone else really.

I helped in the kitchen making vibrant salads with the centrepiece being a flower made from a tomato….Impressive!!!

One night we had kebabs so that was easy with a bit of meat and plenty of salads.

It’s not about what you can’t eat as there are many things that you can eat…only if you want to.

Whilst juicing, my tastebuds changed and so did my choices in food.

For me, I actually found it harder to start eating food again than to juice.

Tuna Salad Juicing Liquid Sunshine

By the Monday, I was really ‘hanging out’ for something to eat but of course after only having liquids for 11 days, one does not go and have a HUGE meal.

Bit by bit or small bowl by small bowl as it was, I started having salads but not just any boring ‘ole’ salad. I grated all sorts like beetroot, carrot anything that grated really in with mixed greens, olives, capsicums, cucumber, tomatoes, sprouts, seeds like sunflower, sesame, chia, pumpkin and made a delish  homemade dressing to top off this vibrant creation.

This photo is when I was a bit further along and had stepped up from an even smaller bowl and was a simple salad. Not quite as creative as some of them but just as enjoyable.

I started introducing Tuna and putting it all into ‘wraps’ which I was quite happy to eat…for days on end.
